Tropical Pulled Pork Tacos

Yield: 18 tacos
Try this recipe along with some pepper & cheese cornbread.

Ingredients

  • Pork
    • 3 lbs boneless pulled pork, cut into 2" chunks
    • 1/3 cup taco seasoning
    • 1 cup orange juice
    • 1/2 cup chicken stock
    • 1/4 cup lime juice
    • 3/4 tsp liquid smoke
  • Pineapple Salsa
    • 1 can (20 oz.) pineapple tidbits
    • 1/2 cup finely chopped red bell
    • 1/4 cup finely chopped green bell
    • 1 tbsp chopped green onion
    • 2 tsp chopped fresh cilantro
    • 2 tsp finely chopped jalapeno
    • 1 tsp grated lime peel
  • Soft taco shells, warmed
You'll likely have extra pulled pork remaining.  You can either make more salsa, or put the pulled pork to use in another recipe.


Directions

  1. Toss the pork with taco seasoning.  Place into Instant Pot pressure cooker.
  2. Mix together the remaining pork ingredients.  Pour into the instant pot.
  3. Pressure cook on "Meat" mode for 30 minutes.
  4. When done, turn the Instant Pot off and let stand for ten minutes.  After 10 minutes, manually release remaining pressure.
  5. Using two forks, shred the pork.
  6. To make the salsa, drain the pineapple reserving the juice.  In a bowl, combine all of the salsa ingredients.  Add 1/4 cup of the pineapple juice.
  7. When ready to serve, spoon some pork onto the taco shells.  Top with pineapple salsa and enjoy.
