Mexican Pizza

Yield: 1 large pizza

Ingredients

  • 1 large pizza crust
  • 1/3 lb. ground beef
  • 3 tsp chili powder
  • 3/4 tsp ground cumin
  • 1 can (15 oz.) refried beans
  • 1/2 lb. shredded Mexican cheese blend
  • Cilantro, to taste
  • 1/4 white onion, sauteed.
  • 1 yellow hot pepper, sliced
  • 1 Roma tomato, diced
  • 1/2 avocado, cut into cubes

Directions

  1. If making pizza crust from scratch, bake it according to recipe directions.
  2. Brown the ground beef in a skillet.  Drain the fat.  Mix in the chili powder and cumin.
  3. Spread a layer of refried beans on the pizza crust.  Top with ground beef & cheese.  Sprinkle on the cilantro and layer on the onion & yellow pepper.
  4. Bake at 425°F for 10 minutes.
  5. Top with tomato and avocado.
  6. Let stand for 3-4 minutes before slicing and serving.
