Thai Chili Peas with Bacon

Yield: 8 servings

These are easily the best peas I've ever had.  The flavors of bacon & Thai chili peppers permeate the peas, infusing them with a sweet & savory flavor that'll have your mouth watering at the first whiff.

Ingredients

  • 4 oz. slab bacon
  • 3 tbsp Thai chili pepper paste
  • 2 bags (12 oz. each) frozen peas

Directions

  1. Cube the slab bacon into 1/4 inch pieces.
    • If you can't find slab bacon, get thick-cut bacon and cut it into pieces.
  2. Pan fry the bacon over low heat until the fat has rendered out and you have crispy bacon cubes.  About 10 minutes.
    • Do not drain the bacon fat!
  3. Add the Thai chili pepper paste and mix with the fat in the bottom of the pan.
  4. Increase the temperature.  Add the frozen peas, cover, and cook until they are fully cooked through.
  5. Serve hot.
