Chorizo Turkey Soup

This soup is easy to throw together and guaranteed to make a rainy day more palatable.

Yield: 6 servings


Ingredients


  • 1 Chorizo sausage
  • 2 cans chicken broth
  • 2 medium potatoes, peeled & diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 jalapeno pepper, diced
  • 1 large onion, chopped
  • 3/4 lb. cooked turkey breast, cubed
  • 1 clove garlic, minced
  • 3/4 cup picante sauce

Directions


  1. Remove the casing and cook the sausage in a skilled.  Drain the fat.
  2. In a large pot, combine the sause, broth, vegetables, turkey, garlic, and picante sauce.  Cover and simmer until the vegetables are cooked, about 15-20 minutes.
  3. Serve hot.
