Yield: 4 servings
- 5 slices thick-cut bacon
- 1 lb frozen corn
- 2 tbsp coarsely chopped fresh cilantro
- Juice of 1 lime
- 1 avocado, chopped
- 1/2 cup feta cheese
- Salt & pepper to taste
- Cook the bacon in a skillet. Pat dry on a paper towl and cut into small pieces. Reserve 1 1/2 tbsp bacon fat and discard the rest.
- In a medium pot, combine the corn, bacon, bacon fat, cilantro, and lime juice. Cook over medium heat until the corn is warm.
- Add the avocado, feta, salt, and pepper. Toss together and return to heat for 2-3 minutes. Serve warm.
