Shrimp Scampi

Instead of the traditional wine sauce, this is made with a garlic and cajun cocktail sauce, making for an unusually & delicious flavor.

Ingredients


  • 8 tbsp butter
  • 1 onion, chopped
  • 4-6 cloves garlic, minced
  • 1 lb. shrimp, shells removed
  • 3 tbsp cajun flavord cocktail sauce
  • 2/3 cup rice, cooked

Directions


  1. In a large skillet, sauté the onion and garlic in the butter until the onions are just beginning to caramelize.
  2. Add the shrimp and cocktail sauce.  Cook over medium heat until the sauce begins to thicken and the shrimp turn pink.
  3. Serve hot over the rice.
