Ingredients
- Beef
- 3/4 lb ground beef
- 1/2 yellow onion, chopped
- 3 cloves garlic, minced
- 1/2 tsp caribbean jerk seasoning
- 1/4 tsp cayenne pepper
- 1/4 tsp crushed red pepper
- 1/4 tsp chili powder
- 1 tsp cajun seasoning
- 1/4 tsp seasoned salt
- 2/3 cup rice, cooked
- 1 cup black beans
- 6 large tortillas
- 1/2 cup salsa
- 1/2 lb. cheddar cheese, grated, divided
- 1 cup picante sauce
- Sour cream
- Green onions, chopped
Directions
- In a large skillet, brown the beef and onion. Drain excess fat and add the spices.
- While the beef is cooking, cook the rice and heat the beans in a small saucepan.
- In each tortilla, put some rice, beans, beef, salsa, and cheese. Roll up and placed in a greased 9" x 13" casserole dish. Drizzle with picante sauce and sprinkle with remaining cheese. Bake at 350°F for 10-12 minutes.
- Serve hot with sour cream and green onions.
