Peach Cobbler

Great tasting dessert was never so easy.  It takes very little work to throw together this easy dessert that will leave your taste buds happy.

Yield: 6 servings


Ingredients


  • Peach Filling
    • 1/2 cup sugar
    • 1 tbsp cornstarch
    • 1/4 tsp cinnamon
    • 1/4 tsp nutmeg
    • 4 cups sliced fresh peaches
    • 1 tsp lemon juice
  • Pastry
    • 1 cup flour
    • 1 tbsp sugar
    • 1 1/2 tsp baking powder
    • 1/2 tsp salt
    • 3 tbsp cold butter
    • 1/2 cup half and half
  • Additional sugar, if desired
  • Ice cream, if desired

Directions


  1. In saucepan, mix the sugar, cornstarch, cinnamon, and nutmeg.  Stir in the peaches and lemon juice.
  2. Cook over medium heat until it simmers and thickens.  Pour into an ungreased casserole dish and keep in the oven to keep it hot.
  3. In a mixing bowl, combine the flour, sugar, baking powder, and salt.  Cut in the butter until crumbly.  Mix in the half and half.
  4. Divide the batter into six even portions and drop into the peach mixture.  Sprinkle with additional sugar.
  5. Bake at 400°F for 25-30 minutes until golden brown.  Serve warm with ice cream or sweetened whipped cream.
