Ingredients
- Sauce
- 4-6 garlic cloves
- 1 tbsp olive oil
- 6 tbsp butter
- 6 tbsp flour
- 3 cups milk
- 2 cups grated parmesan cheese
- 1/8 tsp nutmeg
- 1/2 tsp salt
- 1/4 tsp pepper
- Chicken
- 9 oz. spinach
- 1/4 tsp salt
- 1/4 tsp pepper
- 5-6 chicken breasts
- 1 tbsp olive oil
- 1/2 cup grated parmesan, plus additional if desired
- Cooked bowtie pasta
- Chopped tomato
Directions
- Place garlic in a piece of aluminum foil with 1 tbsp oil. Bake in the oven at 425°F for 30 minutes. Cool for 10 minutes.
- In medium saucepan, melt the butter. Add the flour and whisk until smooth. Gradually add the milk and simmer until thickened.
- Place the roasted garlic and butter mixture into a blender. Add the parmesan, nutmeg, salt,and pepper. Puree.
- Place the spinach in a greased 9x13 casserole dish. Sprinkle with salt and pepper.
- In a large skillet, brown the chicken breasts in the oil on both sides. Place on top of the spinach.
- Pour the sauce from step #3 on top of the chicken, being certain to cover all the chicken breasts.
- Cover and bake at 425°F for 30 minutes. Check temperature with a meat thermometer to ensure it's above 160ºF.
- Remove cover and sprinkle with 1/2 cup parmesan. Return to oven for 5 minutes.
- Let stand for five minutes. Serve over hot pasta. Sprinkle with additional parmesan if desired and top with chopped tomato.
