Puffy Baked Pancake

This is a cool twist on a classic breakfast.  Pretty easy to make, too.


Ingredients


  • 2 tbsp butter
  • 2 large eggs
  • 1/2 cup flour
  • 1/2 cup milk
  • 1/4 tsp salt
  • Powdered Sugar
  • Fruit
  • Whipped topping

Directions


  1. Heat oven to 400ºF.
  2. In bowl, beat eggs with wire whisk.  Add flour, milk, and salt, stirring just until mixed.
  3. In 9 inch round cake pan, place butter.  Put in oven until melted.  Remove and swirl to coat the entire bottom in butter.
  4. Pour batter into pan.  Bake at 400ºF for 25-30 minutes.
  5. Remove from pan.  Cut into quarters.
  6. Dust with powdered sugar and top with fruit and whipped topping.
  7. I used homemade apple compote, but you could use pretty much any chopped fruit.
