Lime Shrimp & Vegetables

I was sitting around on a sunday morning trying to figure out what to cook for dinner that night.  I surfed the web, checked out a few recipes, and finally came up with this idea.  It's a conglomeration of ideas from several places, and turned out to have pretty good flavour.

Ingredients

  • 3/4 lb asparagus, trimmed and cut into 2-inch pieces
  • 1 red pepper, cut into thin strips
  • 1 jalapeno, finely chopped
  • 3/4 lb shrimp, cooked, peeled, and deveined
  • 1 garlic clove, minced
  • Grated peel from one lime
  • Juice from two limes
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • Corn starch
  • Hot cooked white rice

Directions

  1. Simmer asparagus and red pepper in shallow water until tender crisp.
  2. Drain water.  Add jalapeno and shrimp.  Keep warm over low heat.
  3. Combine garlic, lime peel, lime juice, soy sauce, and oyster sauce.  Simmer over medium-low heat.  Thicken with corn starch in cold water.  (Sauce will still be thin)
  4. Serve vegetables over cooked rice.  Pour lime sauce over top.  Enjoy!
