Cornmeal Chicken with Peach Salsa

A surprisingly easy meal, this chicken breast has been covered with cornmeal and then served with tomato-peach salsa and a side of yankee cornbread.  You can make this faster then you think and have a tasty dinner in no time.



Ingredients


  • Salsa
    • 5 medium peaches, peeled and chopped
    • 1 large tomato, chopped
    • 1/4 cup chopped fresh cilantro
    • 3 tbsp  vegetable oil
    • 2 tbsp white vinegar
    • 1/4 tsp salt
  • Chicken
    • 1/2 cup yellow cornmeal
    • 1/2 tsp salt
    • 1/2 tsp pepper
    • 4 boneless chicken breasts
    • 2 tbsp vegetable oil

Directions


  1. Mix all salsa ingredients.  Refrigerate.
  2. Mix cornmeal, salt, and pepper.  Coat chicken.
  3. In skillet, heat oil.  Cook chicken in oil for 15-20 minutes.
