Berry Peach Pound Cake

Pound cakes are very tasty -- definitely worth the time to bake.  This one combines the flavours of peaches, berries, and lemon to make a fantastic recipe that will deliver great taste.  So go ahead, treat yourself.


Ingredients


  • 1/2 cup butter, softened
  • 1 1/4 cup sugar
  • 3 eggs
  • 1/2 cup whipping cream
  • 1/4 cup lemon juice
  • 2 1/2 cups flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 1/4 cups peeled & chopped peaches
  • 2 cups frozen berries (pick your favourite or use a mix like I did)

Directions


  1. Cream butter & sugar.  Add in eggs, cream, and lemon juice.  Add in flour, baking powder, & salt.
  2. Stir in fruit.  Pour into a greased & floured tube pan.
  3. Bake at 350ºF for 60-70 minutes.
  4. Serve with ice cream or whipped topping.  Garnish with lemon curd.
